Lunchbox: Vegetable Rice Slice

This tasty slice makes for the perfect lunchbox filler or afternoon school snack.
 
WHAT YOU NEED:

  • ½ cup uncooked brown rice
  • 4 large eggs
  • 1 zucchini, grated
  • 1 carrot, grated
  • ½ brown onion, diced
  • 1 garlic clove, diced
  • 1 TBS olive oil
  • 1 cup grated tasty cheese
  • ½ cup milk
  • ¾ cup wholemeal self-raising flour or (gluten free alternative)
 
WHAT YOU DO:

  1. Preheat oven to 180C/160C fan-forced and line a baking tin 20cm x 30cm
  2. Cook rice in boiling water until soft and tender
  3. Sauté onion and garlic in olive oil
  4. In a large mixing bowl combine the rice, onion, garlic, zucchini, carrot and flour. Whisk the eggs and stir into the rice mixture, along with the milk
  5. Spread into baking pan and bake for 30 minutes until golden
Allow to cool in pan before slicing
