Lisa's Vegetable Bake

This recipe is SIMPLE - Layer in vege and crack some eggs through and repeat until you run out! 

WHAT YOU NEED:

• 2 medium potatoes 
• 1 large zucchini 
• 2-3 ripe roma tomatoes 
• 8 mushrooms 
• 1 capsicum
• *** NOTE any vegetables could work
• 5 eggs
• 1 slice cheddar cheese 
• Olive oil spray

WHAT YOU DO:

1. Wash and peel potatoes
2. Thinly slice all vegetables
3. Line a loaf tin with some baking paper - give a light spray of oil
4. Layer in potato, zucchini & tomato - then crack 2 eggs over the layers
5. Layer in capsicum & mushrooms - then crack 2 eggs over the layers
6. Layer in any other vege & a final thin layer of potato
7. Whisk one egg and pour over the top layer
8. Tear up a slice of cheddar and scatter on top
9. Cook for 20-30mins at around 200C. Every 10-15mins press down on it with a large spoon to force any liquid to the top. Once it has browned and no more liquid comes to the top, it is done.

PS. It doesn't really matter which order the vegetables go in - but I do recommend putting a top and bottom layer of potato. It was delicious hot, and also makes fine leftovers!
